Holiday Cookies

Nov07 CookiesCooking for Charity’s favorite baker of holiday treats was back with an all-new collection of beautiful and scrumptious goodies. Lory Utz demonstrated five new recipes at (what has become) her annual holiday cookie class. The cookies this year were Cranberry Confection Bars, Tuxedo Treats, Chocolate Mini Madeleines with a Kahlua glaze, Almond “Walnuts” with Chocolate Praline Filling, and Date Nut Envelopes. Nobody puts together a cookie tray like Lory does, even paying attention to which ones look good together.

Cranberry Confection Bars – Cranberries and white chocolate.
Tuxedo Treats – Cocoa and coconut, with a white chocolate filling
Chocolate Mini-Madeleines – Light and chocolatey with a Kahlua glaze
Almond “Walnuts” – They look like walnuts, but they’re not!
Date Nut Envelopes – A cream cheese crust and a date filling

And, oh yes, the thought of cookies at dinnertime inspired the CFC committee to whip up a couple of homemade soups that were out of this world.

Cream of Pumpkin Soup – Pumpkin, ginger and a touch of curry
Escarol and Fennel Soup with Linguica – Hearty and a bit spicy
