Fried Won Ton Skins

1 pkg. Azumaya won ton wraps (at Fred Meyer)
2 cloves garlic, mashed
1/4 cup olive oil, replace as needed in skillet
salt

Let wonton skins come to room temperature before frying.

Heat oil to medium high heat in cast iron skillet. Place garlic at bottom of paper bag. Fry won ton wraps three at a time, a minute or so on each side. Put the fried skin in the bag, salt and gently turn bag. The heat from the skins will release the oils from the crushed garlic cloves. You may have to adjust the heat if they start burning to fast. Repeat with remaining skins, gently turning the bag and salting every few batches.
Serves 10 – 12 as an appetizer. These can be made a day in advance. Store in paper bag tightly closed in a cool place.
