Pork in Lettuce Cups

1 T. oil
1 lb. ground pork
1 can water chestnuts, rinsed, drained and finely chopped
1/2 can bamboo shoots, rinsed, drained and finely chopped\
6 green onions, finely chopped
2 T. dry sherry
1 T. soy sauce
2 t. sesame oil
2 t. oyster sauce
tiny lettuce leaves, inside leaves of green leaf or romaine

Heat oil in pan or wok, add the pork and cook, stirring, over high heat until brown all over. Break up any lumps of pork. Add the water chestnuts, bamboo shoots and green onion, toss well and cook for 1 minute.

Combine the sherry, soy sauce, sesame oil and oyster sauce, add to the pan, toss well add cook for 2 minutes. Remove from the heat.

Put about 1 tablespoon of warm pork mixture on each lettuce leaf.

I serve it with sweet chili sauce as a dipping sauce.

Pork mixture can be prepared early in the day and refrigerated. Reheat to serve.
