Over the Top Mexican!

Chef Molly Schaefer PriestNo, it wasn’t May, but had you come to the March cooking class and you’d be ready to wow your friends with a fabulous Cinco de Mayo dinner party. Whence cometh the Mexican food expertise? From none other than our good friend, Molly Schaefer Priest, who cooks at Portland’s primo Mexican outposts, Taqueria Nueve and Df. Molly also worked for years at Portland’s Genoa Restaurant developing many of the weekly menus. She’s a regular at the annual Pinot Noir Festival in McMinnville, a frequent guest chef at Steamboat Inn’s winemaker dinners, and a familiar face at fundraising events in Roseburg including a Cooking for Charity class just last year.

Molly’s Evening of Mexican Cuisine was a demonstration class and sit-down dinner accompanied by wines from Brandborg Winery in Elkton. Her menu featured seafood cocktails, empañadas, mole, and dulce de leche. All classics and eminently doable in the home kitchen.
