A Winter DinnerWe’re delighted to welcome to Cooking for Charity — for the first time — Simon Boswell, executive chef at the Roseburg Country Club. Simon prepared a marvelous tasting menu that had our mouths watering.

Chef Boswell hails originally from Scotland where he did his formal culinary training, including stints at 3- and 5-star hotels, and won the Scottish Beef Competition along the way (It’s a big deal in Scotland!). In the meantime, he has worked in Ireland, Australia, New Zealand, the Caribbean, and on private yachts out of Miami (unlimited budget—imagine the fun!). Settled down in Roseburg with his wife, principal at Winchester School, and their almost-two year old son, Simon is learning to like the rain and making RCC patrons glad he gave up his gadding about the world.
