Dungeness Crab Salad with Celery Root Remoulade

Dungeness Crab Salad
8 oz of cooked Dungeness crab meat (squeezed dry)
1 1/2 Tbsp of mayonnaise
1/4 bunch of chives (finely diced)
1 1/2 tsp stone ground mustard
1/2 lemon (juiced)
salt and pepper

Combine all the ingredients, mix well. Check seasoning.

Potato Salad
8 oz of fingerling potatoes (or Yukon Gold)
2 Tbsp mayonnaise
1 Tbsp Dijon mustard
1/2 tsp chopped parsley
1/2 of a shallot (finely diced)
salt and pepper

Boil the potatoes until just cooked through. Drain, cool. Dice to 1/4″ size, place in bowl, and add the rest of the ingredients. Mix well. Season and reserve.

Celery Root Remoulade
4 oz of celery root, peeled, fine diced
2 Tbsp creme fraiche or sour cream
salt and pepper
lemon juice

Mix diced celery root with the lemon juice to prevent browning. Mix all ingredients in a bowl. Season and reserve.

The three parts are to be layered. An easy way to do this is to cut a 3″-4″ piece of 2″ diameter white PVC pipe (clean all cut edges) for each order. Wrap a piece of plastic wrap over one end of the pipe and set the pipe, wrapped end down. Place a layer of potato salad in the pipe and tamp down firmly with a small bottle wrapped in plastic wrap. Add a layer of Dungeness crab, followed by a layer of the celery root remoulade, tamping down firmly each layer. Place the filled pipe on a plate, and slide plastic wrap out from under the pipe. Use your plastic wrapped bottle to gently hold the layers down while you slide the pipe up and off. This will leave a small three layered cylinder of the crab salad. Garnish.

Garnishing Ideas
Chives, sliced fine or cut 1/4″.
Red peppers, fine diced, or cut 1/4″.
Chive oil: 2 bunches of chives, 1 cup of vegetable oil blended in a blender for 5 minutes.
Chili oil: 1/2 cup chili powder, 2 cups vegetable oil blended in a blender and strained through coffee filters.
Purple kale oil. Several purple kale leaves, 1 cup of vegetable oil blended in a blender for 5 minutes.
