Cook Italian!

For the final class of our 7th season, Cooking for Charity’s own Mary Edwards and Pat Lee (of the Steamboat Inn) will show us how to Cook Italian! From Pat we will learn to make gnocchi (potato dumplings) with a tomato basil sauce. Mary’s specialty is agnolotti, a handmade stuffed pasta that’s sort of like a ravioli, but for which you don’t need any special forms. The first dish will be stuffed with fava beans and served with a curry emulsion. The other will be filled with salmon and complemented by a sorrel cream sauce. Bring an appetite for tasting and an apron if you want because you’ll have plenty of opportunity to practice forming these little gems.
