Somen Salad

2 bundles of somen noodles – boil for 2 minutes, rinse well and drain.

1/2 head lettuce, sliced thin
2 green onions, thinly sliced diagonally
1/4 lb. Char siu, slivered or barbecued chicken, shredded – optional (you can use any meat)
cilantro, pea pods – optional

Dressing:
3 T sugar
1/4 c rise vinegar
2 T sesame oil
2 T toasted sesame seeds
1/4 cup soy sauce

Place somen on a platter, sprinkle a little dressing so the noodles won’t stick together. Layer lettuce, meat, green onions, pea pods and cilantro.

Pour dressing over the salad before serving. Chinese chili garlic sauce – dot over for extra flavor.

Optionals:
scrambled eggs, fried thin and sliced into strips
kamaboko – Japanese fish cakes
cucumber sliced thin
ham slivered

Serves 6-8.
