Chinese Chicken Salad

4 T sugar
2 cups salad oil
1/4 cup rice vinegar
1 T sesame oil
salt and pepper

Chill for at least 1 hour.

1/4 cup soy sauce
1/8 cup sugar
2 T Five spice seasoning

Poach two chicken breasts and shred into small pieces.

Heat skillet on medium high heat. Add chicken and cooking sauce and saute till dry. Set aside in a small bowl to cool.
Fry 3 oz of Saifun noodles, and set aside.

1 small head lettuce, sliced thinly
1 cup pea pods, blanched and sliced diagonally
4 green onions, finely sliced

In a large bowl, add lettuce, shredded chicken and saifun. Add salad dressing, toss well. Garnish with pea pods, green onions and sesame seeds.

Serve immediately.
