Salmon Steaks

Courtesy of Vincent Maneha

1 whole salmon
1 strip of bacon

Skin and de-bone the fillets. Lay the fillets interior to interior and starting at the tail, slice through to make steaks of equal size (1-1/2 inch) thick. Bend the belly section around the opposite steak. Take a thin strip of bacon, and wrap around the salmon steak. Secure with a foil wrap.

The foil wrap is made by taking a suitable long enough sheet of foil and folding it several times to form a long thin strip of foil. Wrap around the steaks, and secure by twisting the foil strip together.

Cook in your favorite manner, fry, grill, bake, etc.
