Strawberry Cream Cake Roll

Serves 10

1/2 cup cake flour
1 tsp baking powder
4 eggs yolks
1/2 tsp vanilla
1/3 cup sugar
4 egg whites
1/2 cup sugar
Sifted Powdered Sugar

Preheat oven to 375 degrees.

Grease & fit a piece of waxed paper on a 15x10x1 jelly-roll pan.

Combine flour and baking powder, set aside.

In a mixing bowl heat egg yolks and vanilla for 5 minutes or till thick and lemon colored. Gradually add the 1-1/3 cup sugar, beating on high speed till sugar is nearly dissolved.

In another bowl beat egg whites on medium speed till soft peaks form (tips curl). Gradually add the 1/2 cup sugar, beating till stiff peaks form. Fold yolk mixture into beaten egg whites. Sprinkle flour mixture over egg mixture; fold in gently just till combined.

Spread batter evenly into prepared pan. Bake for 12 to 15 minutes. Cake will spring back when lightly touched in comer.

While cake is baking sift powdered sugar on towel.

When cake is finished immediately turn cake out onto the towel and remove the waxed paper. Roll up towel and cake, jelly roll style starting from one side of the cake.

Chocolate Cake:
Change flour to: 1/3 cup flour
Omit: baking powder
Add: l/4 tsp baking soda
Add: l/4 cup unsweetened cocoa powder

1 pint whipping cream whipped
8 oz cream cheese at room temperature
1 cup powdered sugar
1/3 cup sour cream ‘
1/2 tsp vanilla
2 tbsp Vanilla Instant Pudding

Whip the whipping cream and set aside.

In large mixing bowl beat cream cheese till separated. Add powdered sugar 1/4 cup at a time till completely incorporated. Scraping down several times. Add sour cream and mix on high speed until completely incorporated, also scraping down sides. Add vanilla. Sprinkle vanilla instant pudding and fold into cream mixture until completely incorporated.

Refrigerate until ready to assemble

2 cartons strawberries washed & dried

Cut one carton in slices, set in bowl.

To assemble: Unroll cake and spread filling over it; place sliced strawberries on top of cream and roll up the cake. Move cake to a platter and spread the rest of the filling on the cake. Decorate with cleaned strawberries. Chill for at least 2 hours before serving.

Chocolate Filling/Frosting:
Omit: sour cream
Add: 3 oz Semi-sweet chocolate (melted)
Substitute: Chocolate Instant Pudding for Vanilla
