Sticky, Chewy Brownies

11 x 15 rimmed baking sheet

Preheat oven to 325 degrees.

Line 11 x 15 rimmed baking sheet with heavy-duty foil, allowing the extra foil to hang over the edges of the pan. Spray the foil-lined pan with PAM.

– 1 ½ cups unbleached all-purpose flour
– 1 tsp. baking powder
– 2 sticks unsalted butter
– 8 oz. bittersweet chocolate, chopped
– 4 oz. unsweetened chocolate, chopped
– 4 large eggs at room temperature
– 2 cups sugar
– ½ tsp. salt
– 4 tsp. vanilla extract
– 1 1/3 cup chopped pecans
– 1 1/3 cup semisweet chocolate chips
– For topping: 8 oz. semisweet chocolate and ¼ cup butter
– One jar Mrs. Richardson’s butterscotch sauce (Safeway)

Combine flour and baking powder in a bowl and set aside.

Melt the butter and the bittersweet and unsweetened chocolate in a double boiler or in a heatproof bowl set over a saucepan of barely simmering water, stirring occasionally until smooth. Set aside to cool.

When chocolate has cooled slightly, beat the eggs in a large bowl, add sugar, salt and vanilla and beat until incorporated. Add the melted chocolate mixture and beat until incorporated. Add flour mixture and stir with a rubber spatula until almost combined. Stir in chopped pecans and chocolate chips.

Distribute half of the brownie batter into the prepared pan. Drizzle ½ cup of the butterscotch sauce over the brownie batter. Drop the remaining brownie batter over the caramel layer, spreading evenly into the corners of the pan. Drizzle an additional ½ cup of the butterscotch sauce over the top. Using the tip of a butter knife, swirl the butterscotch and the batter.

Bake brownies until a toothpick inserted in the center comes out with only a few crumbs, about 35 – 40 minutes. Cool to room temperature on a wire rack or on a cool stove, so air can get under the pan. When cool, melt 8 oz. semi-sweet chocolate with ¼ cup butter and spread on top of brownies. If you wish, you could shake some finely chopped pecans over the chocolate topping. Refrigerate till completely cool before cutting. Butterscotch sauce will have combined into the chocolate.
